Somebody recently reminded me that I have this blog from freshman year (2 years ago now)! I think summer is definitely a good time to start things up again. I aim to kind of reconstruct the site a bit and I'll post about once a week!

I've been on the East Coast the past couple of days filling myself with tasty (although expensive) noms! Gotta indulge once in awhile... or every day...I had New England clam chower, lobster pasta, and mud pie for dinner!

Not So Magical Black Magic Cake

After a little bit of thought and fifteen minutes browsing the dessert recipes from allrecipes, I decided to make a "Black Magic Cake" It's pretty simple, and the recipe is below. Right now, I'm waiting for the cake to finish baking so... I'll definitely be updating later with results, ratings and pictures!

Black Magic Cake

Ingredients:
  • 3/4 cup and 2 tablespoons all-purpose flour
  • 1 cup white sugar
  • 1/4 cup and 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 eggs
  • 1/2 cup strong brewed coffee
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract
Directions:
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans or one 9x13 inch pan.
  2. In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
  3. Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
  4. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

So, a little evaluation...
NOT GOOD. I mean, it wasn't really bad tasting or anything, it was completely edible and possibly yummy. It wasn't what I expected, I wanted to make a moist cake, sort of like the ones that you make from cake mix. :\ I also thought it would have a mocha-type taste since it had a half cup of strongly brewed coffee in it...but it didn't. The chocolate taste wasn't even that strong. It wasn't what I wanted to make.
I am super disappointed.
My one bowl chocolate cake recipe is so much better.

I've been wanting to make chocolate souffle, I just need the right recipe...

Waffles!

(not like the Belgium kind)
SO, last year, my dad went on one of those super early bird specials at Bed Bath & Beyond, and there he got a super discounted sandwich/waffle maker. So, after acquiring this wonderful piece of equipment, I decided to make waffles. Well, initially I was craving pancakes but then my dad reminded me that we have a waffle maker, and then of course, why not make waffles right?
So, I went to my handy-dandy website http://www.allrecipes.com and got a recipe with tons of input and high ratings.
Very simple recipe, here's a copy of the recipe submitted by Megan on the website:
This is for 5 servings
Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 4 teaspoons baking powder
  • 2 tablespoons white sugar
  • 2 eggs
  • 1 1/2 cups warm milk
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
DIRECTIONS
1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.

2. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended.

3. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

So then, I just put it in the waffle maker and they turned out great actually. Well, not that great because the waffles were just a little dry because I left it in the maker for too long, but it was good for me. Just sprinkle some powder sugar on top, dice some strawberries and scatter and then zigzag some maple syrup. yumm :)
